We went out at the weekend to Landskrona and found some wonderful Lingonberrys at a Farmers Market. Lingonberrys are sometimes called Cowberrys in the UK. We decided to make Lingonberry Jam. A sweet but rather tart jam that goes so well with Swedish meatballs (of IKEA fame) or fried herrings (though to be fair just about everything in Sweden is served with herrings of some kind)
I decided on a really simple recipe - 2kg of Lingonberrys
- 400ml of water
- 400g of castor sugar
Wash and clean the lingonberrys. Remove all stalks and any white or pale berrys , they're not ripe.  Place the washed Lingonberrys in a large pan with the water and bring to the boil. Allow the mixture to boil for around 10-15 minutes  Add the sugar and bring the mixture to a rapid boil. Continue to boil for a further 10-15 minutes  Bottle the mixture in sterlised jars, leaving a 1cm gap at the shoulder  Yes it really is that simple.
